Impure Mince: not for virgins or the vegetarians.

This is a budget stand-by at our place and Kieran calls it "impure mince". It's great because you essentially do all the hard work/prep for 3-4 meals on one night. Take an onion and as much garlic as you can handle and sauté in a small amount of oil.


Add about $10 worth of steak mince (for a family of four and a bit).
 
Find any vegies you have that are starting to look dodgy or close to their use by date and prep then for annihilation.

 With help of 3 year old assistant (if available) use a Food "Pwocessor" to mince the vegies to within an inch of their lives.

 Add the vegetables along with one jar of pasta sauce and 2 tins of chopped tomatoes to the browned off mince.


And cook. (You may also want to remove any fat that comes floating to the surface.


Night one: Spoon mince onto a bed a spaghetti pasta and top with a sprinkle grated cheese for an easy Spaghetti Bolognaise. Or use the Mince in a home-made lasagne.
Night Two: Spoon reheated mince onto a bed of Corn chips top with cheese and then grill. Add a dollop of Sour Cream and Serve,
Night Three: Bake potatoes and top with reheated mince and whatever else takes your fancy (Cheese, sour cream, spring onions etc)

Depending on the quantity of Mince and Vegies we sometimes have enough mince that it can do another night of  Spag Bol or it can be used as mince on toast for a weekend lunch. I have to be careful that I don't 'cut' the mince with too much veg as the kids get tetchy if the mince to Vege ratio is too low.
